Abstract
On this paper, the author analyze the result of the epidemiological study of cholesterol and triglycerides levels realized in 214 children of both sexes between 6-14 years of age selected randomly from the school population of the comunity. Parallelly, a survey has been carried out in the families of selected children to know food preferences and dietetics habits using a questionaire; a similar study also is done with the diet of the school lunch program. As a consecuence of the investigation several observations are obtained but the most relevant is, perhaps, that the mean values of cholesterol and triglycerides are increasing in children and adolescents, probably due to the changes in the dietetic habits wich are quiet distant of the traditional mediterranean diet, a low-fat animal contain and rich on soluble fibers.
